It's up for debate whether these are brownies or cake; they're not fudgy, but they're certainly chocolatey, and very good. You'd never know they're vegan -- I'm a full-blown omnivore, and I eat them just because I like them.

Ingredients:

1.25 cups flour
1 cup sugar
0.33 cup cocoa powder (unsweetened)
1 teaspoon baking soda
1 cup water
2 teaspoons vanilla
0.33 cup canola oil
1 teaspoon white vinegar

1. Preheat the oven to 325 degrees F (a bit hotter if you're not using a Pyrex dish).

2. Mix the dry ingredients together.

3. Stir in the water (better if it's hot), vanilla, canola oil, and finally add the vinegar. Stir immediately; little bubbles should form as the vinegar reacts with the baking soda. (We all did this science project in school, right?) You need those bubbles to make the batter rise, so don't stir too much, just until it's blended.

4. Bake in a 8x8 Pyrex dish for 35 minutes, or until a toothpick in the center comes out clean.

It seems impossible that this could work, yet it does. Splendidly. It's chemistry!

On the verge of what was trying to be a migraine I read this a few hours ago thinking how bizarre but interesting that over there you have such specific groups of BrownieGuides!! - vegans, perhaps vegetarians, even carnivourous brownies! Perhaps I should point out that my headaches make my eyes very unstable and my mind wanders - and all without the help of drugs!
I've since taken some more medication, had a sleep and now I'm off to hunt for my USA cup measures ( 0.33 of a cup could be challenging however )

The decimal measurements are just approximations -- 0.33 is about one third (it should really be 0.3 with a line over it).

Is a US cup really different from a UK cup? I hadn't thought of it. I always thought the UK was where we'd gotten our peculiar measurements in the first place.

sorry, no, you're the weird ones, we still use llbs and oz!! and then the europeans have also forced grammes and kilos on us. Our cups mostly just hold tea!

Thanks for the recipe. Sounds tasty! Too bad I can't fraggin cook. Oh well... maybe I can bug a female relative to hunker down and make them for me...

Out of curiousity, what the heckle are carnivorous brownies? Brownies that eat meat? Brownies that are made out of meat? It really sounds so appalling...

Vegan isn't the same as vegetarian. Vegetarian food contains no meat; vegan food contains no animal products whatsoever. These brownies are vegan because, unlike most other brownies, they contain no eggs, milk, or butter.
