I wasn't necessarily thinking that Occlumency/Legilimency (they seem to go hand in hand) actually damage one's empathy, but perhaps that poor empathy ironically enhances one's ability to learn those skills. A very empathetic person might be reluctant to break into someone's private thoughts, and equally reluctant to cut off their own feelings from others.
